<p><strong>21st Annual Cattlemen&#8217;s Western Art Show</strong> is happening this weekend at the Paso Robles Event Center, Commercial Building 2, 2198 Riverside Avenue, Paso Robles, Ca.</p>
<p>60 artists will be in attendance with over 500 new originals and sculptures.  Artist Reception Friday night from 5:00 &#8211; 9:00 pm, $20.  Hors d&#8217;oeuvres, wine tasting and a no-host bar.  Tickets will be available at the bar.  <strong>Castoro Cellars, Eberle Winery, Graveyard Vineyards, Meridian Vineyards, Parfield Winery, Pozo Valley Wineries </strong>and <strong>Ranchita Canyon Vineyard </strong>will be on hand for wine tasting.</p>
<p>Saturday and Sunday admission is free!</p>
<p>Saturday the event opens at 10:00 and closes at 5:00 pm.  A Cattlemen&#8217;s lunch is available from 11:30 &#8211; 1:30 for $10.  There will also be a no-host bar during the event.  Sunday the event opens at 10:00 am and closes at 3:30 pm.  Lunch will also be available on Sunday.</p>

			<content:encoded><![CDATA[<p>Okay, this recipe is a little more labor intensive, but it always gets rave reviews!</p>
<p>9-inch baked pie shell</p>
<p>I cheat on this and buy the Pillsbury rolled pie pastry in the box.  After many years of making my own pie pastry, I finally decided Pillsbury was as good or better than my own recipe and certainly a time-saver.</p>
<p>Filling:</p>
<ul>
<li>1/3 cup cornstarch<a rel="attachment wp-att-553" href="http://www.pasoroblesrealestateblog.com/uncategorized/sherrys-favorite-lemon-meringue-pie/attachment/lemonmeringuepie2/"><img class="alignright size-medium wp-image-553" title="lemonmeringuepie2" src="http://www.pasoroblesrealestateblog.com/wp-content/uploads/2009/11/lemonmeringuepie2-200x300.jpg" alt="lemonmeringuepie2" width="200" height="300" /></a></li>
<li>1 &amp; 1/2 cups sugar</li>
<li>1/4 teaspoon salt</li>
<li>4 egg yolks slightly beaten</li>
<li>1/4 fresh squeezed lemon juice</li>
<li>2 tablespoons grated lemon peel</li>
<li>2 tablespoons butter</li>
</ul>
<p>Meringue:</p>
<ul>
<li>8 egg whites at room temperature</li>
<li>1/4 teaspoon cream of tartar</li>
<li>3/4 cup sugar</li>
</ul>
<ol>
<li>Line pie plate with pie pastry &amp; bake shell.  Let cool&#8230;</li>
<li>Make filling:  In small saucepan, combine cornstarch, sugar &amp; salt.  Gradually add 1 &amp; 1/2 cups of water and stir until smooth.</li>
<li>Over medium heat, bring to boiling stirring constantly, until smooth and boil for 1 minute.</li>
<li>Remove mixture from heat.  Quickly stir half of the hot mixture into the egg yolks, mix well and then return egg yolk mixture back into sauce pan.</li>
<li>Over medium heat, return to boiling while stirring constantly, and boil 1 minute.</li>
<li>Remove mixture from heat and stir in lemon juice, lemon peel and butter.  Immediately pour into the pie shell.</li>
<li>Preheat oven to 400F.</li>
<li>Make Meringue:  In medium bowl, mix egg whites and cream of tartar at medium speed until soft peaks form when the beater is raised.  (A KitchenAid Mixer comes in handy here, but you can use a hand-held mixer)</li>
<li>Gradually beat in 2 tablespoons of sugar at a time and beat well after each addition.  Continue to beat until still peaks form when the beater is raised.</li>
<li>Spread meringue over hot filling sealing to the edge of the crust and make peaks in the meringue with back of a butter knife or spoon.  Touch meringue with utensil and lift forming many peaks.</li>
<li>Bake 7 to 9 minutes or until meringue is golden.</li>
<li>Cool on a wire rack away from drafts for 1 hour before serving.</li>
</ol>
<p>Two more bits of advice:</p>
<p>Keep an extra dozen eggs on hand just in case your meringue doesn&#8217;t whip up.  This has happened to me more than once.  Don&#8217;t know whether it is because the eggs aren&#8217;t fresh or I just whipped them too long.</p>
<p>Secondly, lemon meringue pie doesn&#8217;t last well in the refrigerator (ingredients tend to separate)  so you may as well eat the whole pie:)</p>

<ul>
<li>8 tablespoons of butter</li>

<li>2 cups chopped celery</li>
<li>12 cups Mrs. Cubbison&#8217;s Herb Seasoned cube stuffing  (or whatever is available)</li>
<li>2 teaspoons of salt</li>
<li>1/2 teaspoon of pepper</li>
<li>1/2 teaspoon rosemary leaves</li>
<li>1/2 teaspoon tarragon leaves</li>
<li>1/2 teaspoon dried marjoram leaves</li>
<li>1 cup canned chicken broth or more</li>
<li>1/2 cup raisins</li>
<li>1/4 &#8211; 1/2 cup walnut pieces</li>
<li>1 Granny Smith or Pippin apple diced</li>
</ul>
<ol>
<li>Melt butter in skillet and saute&#8217; onion and celery until tender.</li>
<li>Add to rest of ingredients in large bowl and toss with a fork until well combined.</li>
<li>Add additional  chicken broth or water if needed to make stuffing moist but not sopping wet.</li>
<li>Put in container and heat until hot.  Remove cover last 15 minutes for crusty topping.</li>
<li>Make sure to have either home-made or canned cranberry sauce for your table.</li>
</ol>
<p>Most cookbooks these days suggest that you cook the dressing in a separate container for health reasons, but that is up to your discretion.</p>

<p>As for myself, I plan to take an <strong>Adobe Photoshop</strong> Class at the <strong>North County Campus</strong> as a prerequisite for taking the <strong>Dreamweaver </strong>Web Design Class in the Spring.  Maybe I&#8217;ll see you there!</p>

			<content:encoded><![CDATA[<p>Well, the answer to that question depends on where you live.  The best time to prune <strong>roses</strong> is just before the rosebush breaks dormancy after the last frost.  In my case, the right time is when I find the time after January 1&#8230;</p>
<p>Pruning allows you to create an attractive shape and desired size that fits into your <strong>landscape</strong>, and it is also <a href="http://www.pasoroblesrealestateblog.com/wp-content/uploads/2009/02/redrosebouquet.jpg"><img class="alignright size-medium wp-image-342" title="redrosebouquet" src="http://www.pasoroblesrealestateblog.com/wp-content/uploads/2009/02/redrosebouquet-200x300.jpg" alt="Red Rose Bouquet" width="200" height="300" /></a>the foundation of a healthy bush producing <strong>well-formed flowers</strong>.</p>
<p>Whatever kind of <strong>rose</strong> you are pruning, always cut away the dead wood.  The dead wood will not come back to life, and it is unattractive and harbors diseases.</p>
<p>When pruning, cut at sharp 30 &#8211; 45 degree angles, and make all cuts down to a cane, to the base of the bud union or to a strong outside bud or bud eye on stem nodules.  A bud eye is a small bulge with a tiny eye and a horizontal crease below.  This bud eye will develop into a new shoot in spring.</p>
<p>Notice the way the bud eye is pointing.  The bud eye should be pointed away from the center of the rose bush since this eye will become a new cane, and you don&#8217;t want new growth protruding toward the center of the bush.</p>
<p>Make cuts about 1/4 inch above the bud and angle the <strong>pruning</strong> shears high on the outside of the cane down toward the inside of the bush.  I hope this makes sense&#8230;</p>
<p>How Much to Prune?</p>
<p>Severe or heavy:  Cut the plant back to 3 or 4 canes.  This will produce a few very showy blossoms.</p>
<p>Moderate:  Cut the plant back to 5 &#8211; 12 canes about 18 &#8211; 24 inches tall.  This allows for a larger bush and is best suited for most gardens.</p>
<p>Light:  Only one-third of the plant is cut back, which  produces a profusion of short-stemmed flowers on larger bushes.</p>
<p>Light pruning works best on a regular basis, with a heavy pruning every 4 or 5 years.</p>
<p>Personally, I have about 40 rose bushes in my landscaping, and even though they don&#8217;t receive all of the care I wish I had time to give them, they still produce a profusion of gorgeous blooms for my table; especially in spring and fall.</p>

			<content:encoded><![CDATA[<p>This is one of my favorite winter soups.  It looks festive and tastes fantastic!  It can be made ahead of time through Step 3 and either refrigerated for 3 days in advance or frozen for 6 months, and then finish off with cream and egg yolks before you serve.</p>

<p>2 tablespoons unsalted butter</p>
<p>2 red onions minced</p>
<p>4 cloves of garlic</p>
<p>1/4 cup minced fresh parsley</p>
<p>6 cups of chicken broth</p>
<p>2 bottles Mezzetta 16 oz roasted bell peppers pureed</p>
<p>1 bay leaf</p>
<p>1 cup Madeira (or more) to taste</p>
<p>1 1/8 cup heavy cream</p>
<p>2 large egg yolks</p>
<p>Salt and freshly ground white pepper to taste</p>
<p>Minced fresh parsley, chives or green onions to garnish</p>
<ol>
<li>Melt butter in 3-quart saucepan and saute onions over low heat until translucent.</li>
<li>Stir in garlic and parsley; continue to cook over low heat approx 5 minutes.</li>
<li>Add chicken broth, pureed roasted bell peppers after drained of water and bay leaf.  Bring soup to boil over high heat and then reduce to medium low and simmer for 15 to 30 minutes.  Stir in Madeira to taste.  At this point, the soup may be refrigerated for 3 days, frozen for 6 months or finished with the cream, egg yolks and served.</li>
<li>Before serving, stir in 1 cup of cream.</li>
<li>Mix together 1/8 cup of cream and 2 egg yolks.  Add 2 or 3 tablespoons of the hot soup to the yolk mixture,  stir and then add the yolk mixture into the soup.  Continue cooking until the soup thickens slightly.  Season with salt and white pepper.  WARNING:  DO NOT BOIL, OR THE SOUP WILL CURDLE!</li>
<li>Garnish each serving with a sprinkle of minced parsley, chives or green onions.</li>
</ol>

			<content:encoded><![CDATA[<p>Continuing on with my previous blog entry about local <strong>farmers markets</strong>, I thought it would be apropos to provide you with my favorite <strong>Minestrone Soup Recipe</strong>.  Of course, you can add or delete almost any vegetable and still wind up with a fabulous, hearty winter soup.</p>
<p>The same goes for whatever carbohydrate you wish to add, whether it be <a href="http://www.pasoroblesrealestateblog.com/wp-content/uploads/2009/01/minestronesoupbowl.jpg"><img class="alignright size-medium wp-image-302" title="Minestrone" src="http://www.pasoroblesrealestateblog.com/wp-content/uploads/2009/01/minestronesoupbowl-243x300.jpg" alt="Hearty Minestrone Soup" width="243" height="300" /></a>pasta noddles, beans &#8212; or better yet &#8212; both!  I would still add the pureed butter beans for flavor and to thicken the soup whether you add pasta noodles or additional beans.</p>
<p>I would, however, stay away from adding green beans, unless you plan to eat the soup within 2 days, as green beans tend to spoil quickly and can cause food poisoning.</p>
<p><strong>Ingredients</strong></p>
<p>Enough olive oil to coat bottom of soup pot  (I prefer light, but your choice)</p>
<p>2 large onions cut in large dice</p>
<p>2 celery stocks cut in large dice</p>
<p>2 carrots peeled, cut lengthwise and then cut in 1/2&#8243; pieces</p>
<p>2 cloves garlic finely chopped  (more if you love garlic like I do)</p>
<p>1 ham hock</p>
<p>2 or more  1lb 12 oz cans of diced tomatoes (or fresh in the summer)</p>
<p>2T fresh chopped Italian parsley</p>
<p>4 cans of chicken stock or more, if needed, to cover vegetables</p>
<p>2 cans butter beans pureed</p>
<p>Salt and freshly ground black pepper</p>
<p>4 small zucchinis medium diced</p>
<p>4 yellow, red or orange bell peppers roasted, cored, skinned and cut into strips</p>
<p>Freshly grated Parmigiano-Reggiano cheese for serving</p>
<p>6 fresh chopped basil leaves, also for serving</p>
<p><strong>Instructions</strong></p>
<p>In a suitable-sized soup pot, heat enough olive oil to cover bottom of pan over medium heat until hot but not smoking.</p>
<p>Add the onion and cook approximately one minute.</p>
<p>Add celery, carrots and garlic.  When simmering nicely, set heat on low and simmer until vegetables begin to soften and onions are translucent.  Stir periodically to avoid scorching.</p>
<p>Add tomatoes and parsley.  Cook at least 5 more minutes for flavors to combine.</p>
<p>Add the stock and one less can of water than called for; ie., if adding 4 cans of chicken stock, only add 3 cans of water.  Add pureed butter beans to soup mixture.  Season with salt and pepper to taste.</p>
<p>Add zucchini, ham hock, kidney beans or butter beans and simmer for 30 minutes.</p>
<p>If adding pasta noddles, add and then simmer for 15 minutes longer.</p>
<p>Remember to stir the soup occasionally and make sure it is simmering; not boiling.  Add more water or stock if necessary during the cooking process.</p>
<p>Before serving, add the roasted peppers.  Remove from heat and stir in parmesan to taste.</p>
<p>Top each bowl of minestrone with grated Parmesan and shopped basil.  A dollop of sour cream may also be added to each bowl to enrichen the flavor of the soup, if desired.</p>
<p>Enjoy with French Bread or any other homemade breads for lunch or add a green salad for a healthy winter dinner&#8230;</p>
